That's why from potato to last night’s stale bread, we have rounded up five budget-friendly recipes that will put all those leftovers to good use; either at home, or in your holiday accommodation later in the year:


#1 Bubble and Squeak


Most of us will be familiar with the British favourite Bubble and Squeak as our annual Boxing Day meal – and for good reason! It’s an easy leftovers recipe combining potato, cabbage – and pretty much anything else you have left to use up.

This Easy Bubble and Squeak Recipe from the fine folk at Kitchen Sanctuary makes a super speedy dinner. Pop a poached egg on top to finish.

You Will Need:

  • 700 g leftover mashed potato
  • 200 g leftover chopped cooked cabbage
  • 2 tbsp veg oil
  • 1/4 tsp salt
  • 1/4 tsp pepper

#2 Baked Cheesy Potato Croquettes

Baked Cheesy Potato Croquettes

Sticking with our versatile vegetable friend, the potato, these delicious baked cheesy potato croquettes from Kitchen Sanctuary make a tasty addition to any main meal, or a yummy bite-sized snack.

Better still, since these bites are a little on the naughty side, this recipe is baked instead of fried to help minimise impact on your family’s waistline!

You Will Need:

  • 260 g chilled mashed potato
  • 10 x 1.5cm cubes strong cheddar
  • 1 egg lightly whisked
  • 90 g plain/ all-purpose flour
  • Pinch of salt and pepper
  • 100 g homemade breadcrumbs made from slightly stale bread
  • 1/2 tsp smoked paprika
  • 1 tbsp vegetable oil

#3 Roast Dinner Pot Pie

Roast Dinner Pot Pie

Here’s a clever roast dinner pot pie mash up from Olive Magazine using leftovers all bundled into one flaky pie. It makes a super easy and comforting family meal.

You Will Need:

  • 25 g, plus 1 tsp unsalted butter
  • 200 g sage and onion stuffing, rolled into 8 balls
  • 3 sprigs thyme, leaves only
  • 2 tbsp plain flour
  • 100 ml white wine
  • 650 ml chicken stock
  • 200 g left-over roast vegetables
  • 250 g shredded roast chicken
  • 320 g sheet chilled all-butter puff pastry
  • 1 beaten egg

#4 Chicken and Potato Casserole

Chicken and Potato Casserole

We love this simple chicken potato casserole from The Spruce Eats. Ideal for a family dinner, it’s easy to prepare and can be optionally topped with a cup of shredded cheddar cheese, or a crunchy buttered bread crumb topping.

You Will Need:

  • 3 tablespoons butter
  • 230 g sliced mushrooms
  • 260 g chopped onions
  • 2 tablespoons all-purpose flour
  • 260 g milk
  • Salt
  • Freshly ground black pepper
  • 260 g diced cooked chicken
  • 260 g diced cooked potatoes
